Apple cake

Ingredients/Components

• sugar - 3 c
• cinnamon - 1 tsp
• eggs - 4 item
• vanilla - 2 tsp
• salt - 1 tsp
• chopped nuts - 1 c
• soda - 1 tsp
• salad oil
• apples, peeled and diced - 3 c

How to make apple cake:

Sift dry ingredients, except cinnamon. Mix well. Mix 1/3 of dry ingredients with cinnamon. Add apples and nuts. Mix until well coated. Mix eggs and oil. Add to dry ingredients. Batter will be very stiff. Add coated apples, nuts and vanilla. Mix well.

Pour into greased tube or Bundt pan. Bake 1 hour and 15 minutes at 350°. Cool in pan. Can be iced with a thin lemon butter and powdered sugar icing, if desired.
