Ingredients/Components
- salt and pepper to taste - 1 item
- cheese - 1/2 c
- oregano - 1 tsp
- small onion, chopped - 1 item
- tomatoes, peeled and chopped - 2 item
- grated sharp cheese - 4 oz
- zucchini squash
- thin bread crumbs - 1 item
How to make zucchini casserole:
Do not peel squash. Wash and slice thin. Steam 5 minutes. Drain. Mix squash, tomatoes, onion, salt, pepper, oregano and half of cheese. Place in 1 1/2-quart casserole sprayed with Pam. Top with remainder of cheese and thin bread crumbs. Bake covered in a 350° oven for 30 minutes. Yields 2 servings.Recipe categories: Egg, Side dish, Casseroles.
