Ingredients/Components
- eggs - 2 item
- oleo - 1 Tbsp
- Parmesan cheese - 1/4 c
- green pepper optional - 1/4 c
- real mayonnaise - 1 c
- large onion, sliced thin - 1 item
- zucchini, sliced and salted - 4 c
- heaping cup white bread crumbs - 1 item
How to make zucchini casserole:
Cook squash until just tender with water halfway up (about 10 minutes). Beat eggs, mayonnaise, oleo, cheese and green pepper. Fold in zucchini and onion. Salt and pepper. Add bread crumbs. Bake 10 to 15 minutes at 350°.Recipe categories: Egg, Side dish, Casseroles.
