Zucchini casserole
Ingredients/Components
- eggs - 2 item
- sour cream - 1/4 c
- butter or margarine - 6 Tbsp
- shredded Cheddar cheese - 1/2 c
- onion, finely chopped - 1 item
- dill weed - 1/2 tsp
- Beau Monde seasoning - 1 tsp
- saltine crumbs - 3/4 c
- to 7 medium zucchini, sliced - 6 item
How to make zucchini casserole:
Preheat oven to 350°. Cook zucchini and onion in a little water until almost tender, about 7 to 8 minutes. Beat eggs, Beau Monde seasoning and dill together in a mixing bowl. Add crumbs. Add drained zucchini and onion. Add sour cream. Melt butter and stir into the vegetable mixture. Pour into a greased, shallow casserole dish. Top with cheese and bake 30 minutes.
