  • sugar - 3 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • salt - 1/2 tsp
  • flour - 3 c
  • oil
  • soda - 1 tsp
  • baking powder - 2 tsp
  • nuts optional - 1 c
  • grated zucchini and rind - 3 c

How to make zucchini cake:

Mix zucchini, sugar, oil and eggs. Combine dry ingredients. Mix well. Add nuts. Grease and flour pans. Bake at 300° for 1 1/2 hours. Makes 3 loaves.
