Ingredients/Components

  • cinnamon - 1 Tbsp
  • salt
  • flour - 3 c
  • eggs, beaten - 4 item
  • baking powder - 1/2 tsp
  • baking soda
  • vegetable oil
  • chopped nuts optional - 1 c
  • plus 1 tsp - 1 Tbsp
  • coarsely shredded zucchini - 4 c
  • sugar I am going to use less

How to make zucchini cake:

Heat oven to 325°. Grease and flour pan. Blend all ingredients on low speed 1 minute. Beat on medium for 1 minute. Pour into pan. Bake 50 to 60 minutes or until toothpick comes out clean. Cool 10 minutes and remove from pan and cool completely.
