  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 2 tsp
  • flour - 2 c
  • oil - 1 c
  • nuts - 1 c
  • corn syrup - 1 Tbsp
  • can crushed pineapple, drained - 1 1/2
  • cream cheese, softened - 1 pkg
  • grated raw zucchini, press dry between paper towels - 2 c
  • Add oil and beat until well blended

How to make zucchini cake:

Beat eggs and sugar until fluffy. Add oil and beat until well blended. In a separate bowl, sift flour and cinnamon. Add dry ingredients to egg mixture. Beat for 2 minutes. Stir in pineapple, zucchini, nuts and vanilla. Mix well and bake in tube pan at 325° for 1 hour. Cool 30 minutes.Glaze:1 1/2 c. confectioners sugar1 pkg. cream cheese, softened1 Tbsp. corn syrup1/2 tsp. vanilla In a small bowl with mixer at low speed, beat all ingredients until smooth.
