Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- eggs - 4 item
- vanilla - 2 tsp
- flour - 2 c
- oil - 1 c
- nuts - 1 c
- corn syrup - 1 Tbsp
- can crushed pineapple, drained - 1 1/2
- cream cheese, softened - 1 pkg
- grated raw zucchini, press dry between paper towels - 2 c
- Add oil and beat until well blended
How to make zucchini cake:
Beat eggs and sugar until fluffy. Add oil and beat until well blended. In a separate bowl, sift flour and cinnamon. Add dry ingredients to egg mixture. Beat for 2 minutes. Stir in pineapple, zucchini, nuts and vanilla. Mix well and bake in tube pan at 325° for 1 hour. Cool 30 minutes.Glaze:1 1/2 c. confectioners sugar1 pkg. cream cheese, softened1 Tbsp. corn syrup1/2 tsp. vanilla In a small bowl with mixer at low speed, beat all ingredients until smooth.Recipe categories: Desserts, Cakes, Squash.
