  • sugar
  • cinnamon - 1 Tbsp
  • eggs - 2 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • chopped nuts
  • flour - 3 c
  • oil - 1 c
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • grated zucchini - 2 c
  • honey - 3/4 c

How to make zucchini bread:

Beat eggs; add oil, sugar, zucchini, vanilla and honey; mix well. Sift all dry ingredients together. Add gradually to zucchini mixture. Fold in nuts.

Bread can be baked in several containers. Bundt pans take 20 to 30 minutes at 350°. Never fill more than half full. Check with toothpick for doneness. Or, can fill 2 regular loaf pans, 9 x 5-inch, half full. Bake at 325° for one hour.

You may need to adjust cooking time and temperature for your own oven. Zucchini is usually peeled before it is grated.
