Ingredients/Components
- sugar
- cinnamon - 1 Tbsp
- eggs - 2 item
- vanilla - 2 tsp
- salt - 1 tsp
- chopped nuts
- flour - 3 c
- oil - 1 c
- baking powder - 1 tsp
- baking soda - 1 tsp
- grated zucchini - 2 c
- honey - 3/4 c
How to make zucchini bread:
Beat eggs; add oil, sugar, zucchini, vanilla and honey; mix well. Sift all dry ingredients together. Add gradually to zucchini mixture. Fold in nuts.Bread can be baked in several containers. Bundt pans take 20 to 30 minutes at 350°. Never fill more than half full. Check with toothpick for doneness. Or, can fill 2 regular loaf pans, 9 x 5-inch, half full. Bake at 325° for one hour.
You may need to adjust cooking time and temperature for your own oven. Zucchini is usually peeled before it is grated.
