Ingredients/Components

  • sugar - 2 c
  • cinnamon - 3 tsp
  • eggs - 3 item
  • vanilla - 2 tsp
  • salt - 1 tsp
  • oil - 1 c
  • baking soda - 2 tsp
  • chopped nuts* - 1 c
  • raw zucchini, coarsely chopped
  • flour, sifted with 1/4 tsp - 3 c

How to make zucchini bread:

Mix well and pour into 2 oiled and floured 5 x 9-inch loaf pans. Bake 1 hour at 350°. Cool completely. Freezes well.

*Raisins optional.
