Zucchini bread

Ingredients/Components

• sugar - 2 c
• cinnamon - 3 tsp
• vanilla - 1 tsp
• salt - 1 tsp
• chopped nuts - 1 c
• flour - 2 c
• oil - 1 c
• soda - 2 tsp
• eggs, beaten - 3 item
• baking powder - 1 tsp
• raisins optional - 1 item
• shredded zucchini - 2 c

How to make zucchini bread:

Combine oil, eggs, sugar and zucchini. Add vanilla and blend well. Mix dry ingredients together. Stir dry ingredients into egg mixture, a small amount at a time. Stir in nuts and raisins. Do not beat. Bake at 325° for 1 hour in small loaf pans or 1 1/2 hours in large cake pan.
