Zucchini bread

Ingredients/Components

• sugar
• cinnamon - 2 tsp
• eggs - 3 item
• vanilla - 2 tsp
• salt - 1 tsp
• chopped nuts - 1 c
• flour - 2 c
• soda
• baking powder - 1/2 tsp
• vegetable oil - 1 c
• raisins - 1 c
• grated and well drained zucchini - 2 c

How to make zucchini bread:

Beat eggs; stir in oil, sugar, zucchini and vanilla. Sift together flour, baking powder, soda, salt and cinnamon. Stir into egg mixture until well blended. Add nuts and raisins; mix again. Pour into 2 greased loaf pans. Bake at 375° for 1 hour. Cool in pans on wire racks for 10 minutes. Cool completely before freezing.
