Zucchini boats
Ingredients/Components
- salt - 1/2 tsp
- melted margarine - 2 Tbsp
- pepper - 1/4 tsp
- chopped onions - 1/4 c
- medium tomato, chopped - 1 item
- medium zucchini - 6 item
- fresh bread crumbs - 1 c
- Thinly sliced cheddar cheese - 1 item
How to make zucchini boats:
Trim ends of zucchini. Cook covered in boiling salted water for about 10 minutes. Drain. Cut in half lengthwise. Scoop out center of each and chop. Combine chopped zucchini, bread crumbs, onion, tomato, seasonings and margarine. Toss lightly. Fill each shell, place in shallow baking dish and bake at 350 degrees for 30 minutesPlace cheese on top and broil just enough to melt.
