Winter vegetable soup
Ingredients/Components
- salt - 1/2 tsp
- vegetable oil - 4 Tbsp
- pepper - 1/4 tsp
- can stewed tomatoes - 1 item
- whole wheat flour - 1/2 c
- carrots, peeled and sliced - 4 item
- chopped parsley - 1 Tbsp
- shredded cabbage - 2 c
- large onion, chopped - 1 item
- glove garlic, crushed - 1 item
- water or canned beef broth - 5 c
- small can kidney beans, drained - 1 item
How to make winter vegetable soup:
Heat oil in large pot. Add onion and garlic and cook until soft but not browned. Add flour and cook, stirring constantly, 1 to 2 minutes. Remove from heat; add broth slowly, stirring well, and return to heat. Add all the vegetables and other ingredients and simmer until vegetables are tender.
