Watermelon ice
Ingredients/Components
- salt - 1/4 tsp
- confectioners sugar - 3 Tbsp
- lemon juice - 1 Tbsp
How to make watermelon ice:
Blend at low speed 1 cup watermelon chunks with confectioners sugar, lemon juice and salt until mixture is smooth; add the remaining watermelon chunks and blend a few seconds longer, until smooth. Pour mixture into a 9 x 9-inch baking pan; cover with foil and freeze until partially frozen (about 2 hours).Put mixture into a large chilled bowl and mix at high speed until fluffy. Return mixture to baking pan and freeze until firm (about 1 1/2 hours).
To serve: Remove watermelon ice from freezer and let stand at room temperature about 10 minutes for easier scooping.
