Vegetarian chow mein
Ingredients/Components
- salt - 1/2 tsp
- water - 1/4 c
- mushrooms, sliced - 1 c
- onion powder - 1/2 tsp
- canola oil - 3 Tbsp
- mung bean sprouts - 2 c
- fresh celery thin diagonal slices - 3 c
- fresh onions thin sliced rings - 2 c
- tofu, cubed - 1 c
- green peas or parsley - 1/4 c
- water or liquid drained from vegetables
- salt or kelp - 1/4 tsp
- arrowroot starch
How to make vegetarian chow mein:
In a large skillet, heat first 4 ingredients. Add celery, onions, bean sprouts, mushrooms, tofu and peas or parsley. Cook, covered, just until crisp-tender, about 15 minutes. Combine remaining ingredients. Pour over cooked mixture and stir until thick.Arrowroot is a wonderful thickener for making smooth sauces and works at low temperature so that the liquid does not have to be boiling, but only when the food is to be served immediately as it does not hold for long, nor will it thicken when re-heated.
