Ingredients/Components

  • large can French-style beans, drained - 1 item
  • can tiny peas, drained - 1 item
  • jar chopped pimento - 1 oz
  • vinegar - 1 c
  • cooking oil - 1/2 c
  • sugar or more if desired - 1/4 c
  • water - 1 Tbsp
  • pepper - 1/4 tsp
  • salt - 1 tsp

How to make vegetable salad:

Mix last 6 ingredients. Boil 1 minute. Cool slightly and pour over drained vegetables. Chill 3 to 4 hours or overnight before serving.

Variation: Use Shoe Peg corn instead of French beans. Keeps well in refrigerator.
