Vegetable medley
Ingredients/Components

- salt
- pepper - 1/2 tsp
- cayenne - 1/8 tsp
- green peppers, cut in strips - 2 item
- butter and olive oil - 4 Tbsp
- tomatoes, peeled and wedged - 4 item
- small yellow squash or zucchini - 4 item
How to make vegetable medley:
Dice squash into 1/2 inch pieces. Melt butter and olive oil together. Saute squash until slightly brown. Remove from pan. Add onion and green peppers. Saute until limp. Add tomatoes and seasonings. Add corn. Cook uncovered for 15 minutes. Return squash to pan. Serves 8.Recipe categories: Side dish, Potato, Vegetables.
