Vegetable medley
Ingredients/Components
- butter - 1/3 c
- Parmesan cheese - 1/4 c
- onion salt - 1/2 tsp
- parsley - 1/4 tsp
- small head cauliflower - 1 item
- medium tomatoes, cut into wedges - 2 item
- thyme - 1/4 tsp
- medium zucchini - 2 item
- fresh broccoli - 1 lb
How to make vegetable medley:
Combine first 4 ingredients in one-cup measure. Microwave on High until melted (45 seconds). Trim and cut broccoli and cauliflower into flowerets. Arrange cauliflower around the outer edge of 10-inch platter, then a row of broccoli flowerets. Fill center with slices of zucchini. (Can use mushrooms also.) Cover entirely with plastic wrap and seal. Microwave on High 9 minutes. Drain liquid.Arrange tomato wedges on top and sprinkle with cheese. Microwave 1 1/2 to 2 minutes on High or until tomatoes are heated through. Makes 2 (10-inch) platters.
