Ingredients/Components

  • pkg - 1 lb
  • Ricotta cheese - 1 lb
  • large jar spaghetti sauce - 1 item
  • red peppers, chopped coarsely - 2 item
  • green peppers, chopped coarsely - 2 item
  • frozen spinach 10 oz - 1 pkg
  • Mozzarella cheese solid - 1 lb
  • large mushrooms, chopped - 10 item
  • Parmesan cheese, grated for topping - 1 item

How to make vegetable lasagna:

Saute peppers and mushrooms until soft. Drain. Prepare frozen spinach. Drain thoroughly and mix with Ricotta cheese. Slice Mozzarella cheese into cracker size pieces. Spread thin layer of sauce in bottom of baking pan. Add noodles, sauce, spinach mixture, vegetables, slices of Mozzarella and more sauce. Repeat layers, ending with noodles and remaining sauce. Top with Parmesan cheese. Cover with foil and bake at 350° for 1/2 hour or until bubbly.
