Ingredients/Components

  • water - 1/2 c
  • oil - 1 Tbsp
  • cloves garlic, minced - 2 item
  • oregano - 1 tsp
  • wine vinegar - 1 Tbsp
  • Parmesan cheese, grated - 1 item
  • medium onion, chopped - 1 item
  • cumin - 1 tsp
  • can kidney beans - 1 item
  • frozen tofu, thawed, mashed, drained and squeezed approximately 1/2 block Tomori or Oshiro - 1 c
  • hot chili powder or more to taste - 1 tsp
  • small can tomato paste no salt added - 1 item

How to make tofu chili:

Heat oil and saute onion until tender. Add garlic, tofu and seasoning. Stir in tomato paste and vinegar. Cook over low heat for a few minutes. Add beans and water. Serve with Parmesan cheese. Vegetables such as peppers, zucchini, corn or cabbage may be added. Serves 4 to 5.

Note: To freeze tofu, remove from container and cut into cubes. Put cubes into freezer-safe container and freeze until ready to use.
