Ingredients/Components
- sliced green onions - 1/2 c
- 6 oz
- cream cheese, softened - 3 oz
- cumin - 1 tsp
- medium bell pepper, diced - 1 item
- small flour tortillas - 8 item
- Pace picante sauce hot, medium or mild - 1 c
How to make three-cheese enchiladas:
Combine 1 cup of Monterey Jack cheese, 1 cup of Cheddar cheese, cream cheese and 1/4 cup of picante sauce. Saute bell pepper and green onions. Drain off butter and add to cheese mixture. Add cumin and mix well.Spoon 1/4 cup of cheese mixture down center of each tortilla; roll and place, seam side down, in 13 x 9-inch baking pan. Spoon remaining picante sauce evenly over enchiladas. Cover with remaining cheese. Bake at 350° about 20 minutes. Makes 4 servings.
