Ingredients/Components
- salt - 1 tsp
- water - 2 qt
- pepper - 1/2 tsp
- diced onion - 2 c
- chopped celery
- cloves garlic, minced - 4 item
- sliced green onions - 1 c
- chopped green pepper - 1 c
- 6 oz
- hot sauce - 1 tsp
- bay leaves - 2 item
- red pepper - 1 tsp
- dried red beans - 1 lb
- vegetable cooking spray - 1 item
- dried Italian seasoning - 1 tsp
- hot cooked rice, cooked without salt or fat
How to make red beans and rice:
Sort and wash beans; place in a large Dutch oven. Cover with water 2 inches above beans; let soak 8 hours. Drain well.Coat a Dutch oven with cooking spray; place over medium-high heat until hot. Add celery, onion, green onions, green pepper and garlic; saute until tender. Add beans, ham and remaining ingredients except rice, and cook, uncovered, over medium heat for 1 hour, stirring occasionally. Remove bay leaves; serve bean mixture over rice. Yield: 9 servings (309 calories per 1 cup beans and 1/2 cup rice).
