Ingredients/Components

  • soft corn tortillas - 1 pkg
  • ground beef
  • onion, chopped - 1 item
  • can chili beans - 1 oz
  • Velveeta cheese, sliced - 1 lb
  • can cream of chicken soup - 1 oz
  • can Ro-Tel tomatoes - 1/2 item
  • chili powder - 1 tsp
  • garlic powder - 1 tsp
  • salt - 1 tsp
  • pepper - 1 tsp

How to make tex-mex casserole:

Butter a 9 x 13-inch pan. Line with 6 flat tortillas. Brown meat and onion with chili powder, garlic powder, salt and pepper. Add beans with juice; simmer for 10 minutes. Pour browned meat mixture on top of tortillas; top with sliced Velveeta cheese. Cover with remaining tortillas. Mix soup with Ro-Tel; add on top. Cover with foil; bake for 1 hour at 300°.
