Sweet potato muffins
Ingredients/Components
- sugar
- cinnamon - 1 tsp
- eggs - 2 item
- chopped pecans - 1/4 c
- milk - 1 c
- salt - 1/4 tsp
- flour
- butter - 1/2 c
- nutmeg - 1/4 tsp
- baking powder - 2 tsp
- raisins - 1/2 c
- mashed sweet potatoes
How to make sweet potato muffins:
Cream the butter and sugar together. Add eggs and mix well. Stir in sweet potatoes. Sift the flour, baking powder, salt, cinnamon and nutmeg together. Add alternately with milk. Do not overmix. Fold in pecans and raisins. Grease 1 1/2-inch muffin tin and fill 2/3 full of batter. Bake at 400° for 25 minutes. Makes 5 dozen.Can be frozen and reheated.
