Sweet potato custard

Ingredients/Components

• sugar - 1 Tbsp
• packed brown sugar - 2 Tbsp
• salt - 1/2 tsp
• raisins - 1/4 c
• ground cinnamon - 1 tsp
• evaporated skim milk - 1 c
• beaten egg yolks - 2 item
• mashed banana - 1/2 c
• Pam cooking spray - 1 item
• mashed cooked sweet potatoes - 1 c

How to make sweet potato custard:

In a medium bowl, stir together sweet potato and banana. Add milk and blend well. Add brown sugar, egg yolks and salt. Mix. Spray 1-quart casserole with Pam. Put sweet potato mixture in casserole.

Combine raisins, sugar and cinnamon. Sprinkle on top of mixture. Bake in a preheated 300° oven for 50 minutes or until a toothpick or knife inserted in middle comes out clean.
