Ingredients/Components

  • eggs - 2 item
  • chopped pecans - 1 c
  • flour - 1/3 c
  • stick margarine - 1/2 item
  • brown sugar - 1 c
  • evaporated milk - 1/2 c
  • coconut - 1 c
  • butter flavoring - 1/2 tsp
  • white sugar - 1 c
  • mashed sweet potatoes, cooked - 3 c

How to make sweet potato casserole:

Cook potatoes, drain and mash. Mix with the white sugar, 1/2 stick margarine, evaporated milk, butter flavoring and eggs. Mix well and place in casserole dish.

Topping: Mix the brown sugar, flour, coconut, 1/2 stick margarine and chopped nuts and sprinkle over potato mixture. Bake at 350° for 35 minutes. Can add some of the potato juice, if needed.
