Sweet potato bake
Ingredients/Components
- packed brown sugar - 1/4 c
- salt - 2 tsp
- margarine, softened - 6 Tbsp
- margarine - 1/4 c
- ground ginger - 1 tsp
- orange juice - 1/4 c
- orange marmalade - 1/2 c
- , peeled and cubed - 7 large
- Topping:12 oatmeal cookies, crumbled
How to make sweet potato bake:
Topping:12 oatmeal cookies, crumbled6 Tbsp. margarine, softened Place sweet potatoes in a Dutch oven and cover with water; bring to a boil. Reduce heat; cover and cook just until tender, about 15 minutes. Drain well. Mash potatoes with margarine. Add marmalade, orange juice, brown sugar and ginger. Transfer to a greased 13 x 9 x 2-inch baking dish. Toss cookie crumbs with margarine; sprinkle over the top. Bake, uncovered, at 400° for 20 minutes or until browned.
