Sweet and sour chicken
Ingredients/Components
- sugar - 1/2 c
- cornstarch - 1/4 c
- egg, slightly beaten - 1 item
- water - 1/4 c
- vinegar - 1/2 c
- soy sauce - 1 tsp
- cooked rice - 4 c
- cut-up cooked chicken
- squares - 1 medium
- pineapple chunks, drained and save syrup - 1 can
- 1-16 oz can of sliced carrots, drained
How to make sweet and sour chicken:
Toss chicken and egg until all pieces are covered. Sprinkle 1/4 c. cornstarch over chicken, toss until all pieces are covered. Brown chicken in skillet with cooking oil. When browned, remove from skillet.Add enough water to reserved pineapple syrup to make 1 c. Stir liquid, vinegar and sugar into skillet. Bring to a boil, stirring constantly. Stir in green pepper. Reduce heat; cover and simmer 3 minutes.
Blend 1/4 c. cold water with 2 Tbsp. cornstarch, stir into skillet. Cook stirring constantly until mixture thickens and boils. Boil and stir for 1 minute. Stir in pineapple, soy sauce, carrots, and chicken, heat through. Serve over rice.
