Summer vegetable salad
Ingredients/Components
- olive oil - 1/4 c
- to 3 garlic cloves, minced - 2 item
- juice of 1 lemon
- dry white wine - 1/4 c
- thyme - 1/2 tsp
- corn about 6 ears - 3 c
- green pepper, minced - 1 item
- small red onion, minced - 1 item
- tomatoes, chopped fine - 2 item
- scallions, sliced thin - 6 item
- finely chopped fresh parsley - 2 Tbsp
- chopped fresh basil - 2 tsp
How to make summer vegetable salad:
In heavy pan, heat oil and cook garlic with lemon juice, wine, thyme, and salt and pepper to taste for 5 minutes. Add corn and simmer for about 3 minutes. Combine all. Refrigerate so flavors blend. Serve cold or room temperature. Serves 6.Recipe categories: Appetizers, Salads, Side dish.
