Ingredients/Components
- chopped peanuts - 2 Tbsp
- grated orange rind - 1 tsp
- softened cream cheese - 1 item
- small curd cottage cheese - 1/3 c
- peanut halves - 1 item
- to 15 large pitted prunes - 12 item
How to make stuffed prunes:
Place prunes in saucepan. Cover with water; bring to boil, cover, reduce heat and simmer for 5 minutes. Drain, set aside. Combine cottage cheese, peanuts and orange rind, mixing well. Spoon mixture into a pastry bag with large tip, pipe into cavity of each cooled prune. Garnish with peanut halves by putting a little softened cream cheese on top of each filled prune to place peanut halves onto prunes.Recipe categories: Desserts, < 60 mins, Appetizers.
