  • sugar - 2 Tbsp
  • butter - 2 Tbsp
  • heavy cream - 2 Tbsp
  • egg yolk - 1 item
  • cognac - 1 Tbsp
  • macaroons, crushed - 6 item
  • medium peaches ripe - 7 item

How to make stuffed peaches:

Preheat oven to 350°. Butter a baking dish. Peel one peach. Cut flesh in pieces. Cut remaining peaches in half. Remove pits and scoop out a bit of the pulp from each half. Combine pulp with cut up peach and mash well with a fork. Add butter and crushed macaroons, egg yolk, cream and cognac; mix well. Fill each peach half with mixture, mounding it slightly. Arrange in baking dish and bake 40 minutes. Serve hot or cold.
