Stir-fried beef and broccoli
Ingredients/Components
- round steak, cut crosswise in very thin slices - 1 lb
- water, divided - 1/2 c
- soy sauce - 1/3 c
- brown sugar packed - 2 Tbsp
- cooking sherry - 3 Tbsp
- clove garlic, crushed - 1 item
- ginger - 1 tsp
- cornstarch - 1 tsp
- oil - 3 Tbsp
- bunch broccoli, cut in florets - 1 item
- large onion, cut in wedges - 1 item
- fresh mushrooms - 1 lb
How to make stir-fried beef and broccoli:
Marinate steak in mixture of 1/4 cup water, soy sauce, sugar, sherry, garlic, ginger and cornstarch for at least 1/2 hour. Drain well, reserving marinade.Heat oil in skillet or wok. Add steak slices, half at a time, to prevent over crowding. Stir-fry over high heat until browned. Remove from skillet and set aside.
Add broccoli, onion and mushrooms to skillet or wok. Stir-fry 1 minute. Add remaining 1/4 cup water. Cover and steam until broccoli is crisp-tender. Return meat to skillet or wok with reserved marinade. Stir-fry to heat through. Serves 4.
