  • salt - 1 tsp
  • water - 6 c
  • oil - 2 tsp
  • long grain rice - 3 c

How to make steamed rice:

Rinse the rice in a pan 3 to 4 times in cold water, draining most of the water off. Place rice, water, oil and salt in a four-quart, nonstick saucepan. Stir to mix well. Bring to a boil, uncovered, then reduce heat to medium. Let simmer until the rice is "au dent" and most of the water is absorbed. Drain in a colander, discarding the water.

Oil the bottom of the saucepan and return the rice to the pan. Do not pack the rice tightly. Poke several "steam holes" in the rice with handle of a wooden spoon. Place a paper towel over the pan and cover with the lid. Steam on low heat for 30 minutes or until the outside of the pan "hisses" when touched with a wet finger. Removing the lid and the towel, place the pan in a sink filled with two inches of cold water for several minutes. Invert the rice over a large platter. The bottom will be crusty.
