  • sugar - 1 tsp
  • eggs - 3 item
  • salt - 1 tsp
  • butter - 3 Tbsp
  • baking powder - 2 tsp
  • sweet milk, scalded - 2 c
  • yellow or white corn meal - 1 c

How to make spoon bread:

Add corn meal to scalded milk, stirring constantly to prevent lumping. Combine butter; blend until smooth. Cool slightly. Add well beaten egg yolks, beating while adding. Combine salt, sugar and baking powder, then stir in. Fold in stiffly beaten egg whites. Pour into a hot baking or casserole dish. Preheat oven to 400°. Cook for 30 minutes. Serve hot. Bread will be soft; serve with spoon.
