  • milk - 2 c
  • butter - 2 Tbsp
  • cornmeal - 1 c
  • stiffly beaten egg whites - 3 item
  • beaten egg yolks - 3 item
  • each: baking powder and salt - 1 tsp

How to make spoon bread:

Stir 2 cups milk into cornmeal and cook until the consistency of mush. Remove from heat; add 1 cup milk, butter, baking powder and salt. Stir a moderate amount into beaten egg yolks. Return to mixture. Fold in stiffly beaten egg whites. Bake in greased 2-quart casserole at 325° for 55 minutes. Serve with butter. Serves 6.
