  • pkg - 1 oz
  • salt - 1/4 tsp
  • garlic powder - 1/8 tsp
  • pepper - 1/8 tsp
  • grated Parmesan cheese - 2 Tbsp
  • chopped tomato - 3/4 c
  • Italian seasoning - 1 tsp
  • minced onion - 1 Tbsp
  • low-fat Ricotta cheese - 3/4 c

How to make spinach ricotta pie:

Preheat oven to 350°. Mix spinach and onion; set aside. Beat cheeses and seasonings in a small bowl at medium speed with an electric mixer until well blended. Stir in spinach mixture. Spread into a 9-inch pie plate. Bake 15 to 20 minutes or until thoroughly heated. Top with remaining ingredients (cheese and tomato). Serve with bagel chips or crisp crackers. Enjoy.
