Ingredients/Components

  • eggs, beaten - 3 item
  • melted butter - 1/4 c
  • salt and pepper to taste - 1 item
  • clove garlic, crushed - 1 item
  • medium green pepper, chopped - 1 item
  • medium onion, grated - 1 item
  • chopped spinach, washed and drained - 2 c
  • toasted soft bread crumbs - 1 c
  • hard-cooked egg yolk, sieved - 1 item

How to make spinach loaf:

In a mixing bowl, combine all ingredients, except egg yolk, and blend thoroughly. Turn into a buttered 5 x 8-inch loaf pan. Set in a larger pan with 1-inch warm water and bake for about 1 hour at 325°. When done, let cool for a few minutes and then turn out on a heated platter. Sprinkle with hard-cooked egg. Slice and serve.
