- salt - 1/2 tsp
- buttermilk - 1 qt
- vegetable oil - 1 item
- all-purpose flour
- paprika - 1 tsp
- ground red pepper - 1/2 tsp
- cloves garlic, minced - 4 item
- freshly ground black pepper - 1 tsp
- chicken pieces - 9 lb
- fresh cilantro sprigs - 1 item

How to make spicy fried chicken:
Garnishes: corn salad-filled sweet peppers fresh cilantro sprigs Combine first 5 ingredients in a large bowl. Add chicken pieces, turning to coat. Cover and refrigerate at least 8 hours. Drain chicken, discarding buttermilk mixture. Combine flour and next 4 ingredients in a shallow dish. Dredge chicken in flour mixture, shaking off any excess. Let stand in refrigerator 30 minutes.Pour oil to depth of 1/2-inch into a large skillet; heat to 350°. Add 1/3 of chicken and fry 20 to 25 minutes, turning once. Drain on paper towels. Repeat procedure with remaining chicken. Garnish, if desired. Yield: 18 servings.
