Ingredients/Components
- can black beans - 1 oz
- can Rotel or other brand diced tomatoes and green chiles - 1 oz
- Minute Rice or other instant rice - 1 item
- Tortilla, corn chips, or tortilla chips - 1 item
- Pepperjack cheese - 1 item
How to make spicy black bean rice:
Preheat oven to 350°. Pour Rotel and beans into casserole dish. Fill empty Rotel can with uncooked rice and stir into dish. Bake at 350° for about a half-hour or until rice is cooked. Top with slices or shreds of pepperjack cheese. Serve on tortillas, as dip with low-fat corn ships or alone as an entree.Recipe categories: Main dish, One Dish meal, Long Grain rice.
