Spanish rice
Ingredients/Components
- bacon, cut into 3/4-inch pieces about 10 slices - 1/2 lb
- hamburger meat - 1/2 lb
- water - 2 c
- uncooked regular rice - 1 c
- chopped green pepper - 2/3 c
- can stewed tomatoes - 1 oz
- chili powder - 1 tsp
- dried oregano leaves - 1/2 tsp
- salt
- pepper - 1/8 tsp
How to make spanish rice:
Fry bacon until crisp; drain on paper towels. Cook and stir hamburger and onion in a 10-inch skillet until hamburger is light brown; drain. Stir in bacon and remaining ingredients. Heat to boiling; reduce heat. Cover and simmer, stirring occasionally, until rice is tender, about 30 minutes. (Add small amount of water during cooking if necessary.) Makes 6 servings.In honor of Ana Belen Prieto, Spanish exchange student who lived with us, 1990-91.
