Ingredients/Components
- salt - 1/4 tsp
- olive or vegetable oil
- red wine vinegar - 3 Tbsp
- ground cumin
- Tabasco sauce
- green onions - 1/2 c
- celery - 3/4 c
- can red kidney beans - 1 item
- can pinto beans - 1 item
- cilantro or parsley - 1/4 c
- finely chopped cilantro - 1/4 c
- pitted olives, cut into wedges
- sliced chopped tomatoes - 2 c
- Mix in bowl with vinaigrette
How to make southwest bean salad:
Piquant Vinaigrette:1/2 c. olive or vegetable oil3 Tbsp. red wine vinegar1 1/2 tsp. ground cumin1 1/2 tsp. Tabasco sauce1/4 tsp. salt Rinse and drain beans; combine beans, olives, chopped celery, chopped onions, tomatoes and cilantro or parsley. Mix in bowl with vinaigrette. Toss gently. Serve in lettuce-lined bowl.
