Southwestern bean salad
Ingredients/Components
- salt - 1/4 tsp
- olive or vegetable oil - 1/4 c
- red wine vinegar - 1/2 c
- ground cumin
- celery ribs, diced - 2 item
- can black beans, rinsed and drained - 1 item
- can black-eyed peas, rinsed and drained - 1 oz
- scallions, diced - 2 item
- can pink beans, rinsed and drained - 1 1/2
How to make southwestern bean salad:
In large bowl with wire whisk or fork, mix olive oil, vinegar, cumin and salt. Add celery, scallions, pink beans, black beans and black-eyed peas. Gently toss to coat well. To serve, stir in celery leaves.Recipe categories: Salads, Side dish, Black beans.
