Sour cream potato salad
Ingredients/Components
- sour cream - 1/2 c
- salt
- lemon juice - 1 Tbsp
- pepper - 1/2 tsp
- mayonnaise - 2/3 c
- hard boiled eggs, chopped - 4 item
- medium potatoes - 6 item
- sliced celery - 1/2 c
- sweet pickle relish - 1/4 c
- Italian salad dressing - 1/4 c
- jar diced pimento, drained - 1 oz
- Curly lettuce leaves optional - 1 item
How to make sour cream potato salad:
Wash potatoes and cook in boiling salted water to cover 30 minutes or until tender. Drain and cook completely. Peel and cube potatoes. Combine potatoes, eggs and celery in a large bowl; toss gently. Combine mayonnaise, sour cream, salad dressing, lemon juice, salt and pepper in a small bowl; stir well. Pour over potato mixture, tossing gently. Cover and chill thoroughly. Just before serving, add relish and pimento; toss gently. Serve on lettuce leaves if desired.Recipe categories: Salads, Potato, Vegetables.
