  • potatoes, peeled, cubed and cooked - 5 lb
  • diced celery - 1 c
  • salt - 2 tsp
  • sour cream - 16 oz
  • mustard - 3 Tbsp
  • large green onions, sliced - 2 item
  • vinegar, divided - 5 Tbsp
  • eggs, coddled - 4 item
  • pepper - 1 tsp
  • clove garlic, minced - 1 item

How to make sour cream potato salad:

Chill potatoes. Add celery, 3 tablespoons vinegar and salt; toss lightly. Place sour cream in small mixing bowl. Add coddled eggs, remaining vinegar, pepper, mustard, garlic and onion; mix well. Pour dressing over potato salad; mix well. Chill for at least 3 hours before serving.
