Sour cream enchilada casserole
Ingredients/Components
- milk - 3/4 c
- sour cream - 1 c
- flour - 1 Tbsp
- butter - 1/4 c
- garlic powder - 1/2 tsp
- chili powder - 2 tsp
- grated cheese - 1 c
- ground beef - 1 lb
- medium onion, chopped - 1/2 item
- corn tortillas - 6 item
- cumin - 1 tsp
- jalapeno relish or salsa - 1/2 c
How to make sour cream enchilada casserole:
Brown meat and drain off excess fat. Combine onion, spices and relish with meat; set aside. Make white sauce by melting butter in a skillet, stirring in flour, then milk. Bring to a boil or heat until thick. Remove from heat and stir in sour cream. Grease a casserole dish and prepare 2 layers like this: three tortillas in pieces, 1/2 the sour cream sauce, 1/2 the meat mixture and 1/2 cup grated cheese. Repeat these layers. Bake at 375° for about 20 minutes. Remove from oven and let set 20 minutes before serving.Recipe categories: Main dish, Casseroles, Ground beef.
