  • salt - 1/2 tsp
  • flour - 2 c
  • baking powder - 1 Tbsp
  • shortening - 1 Tbsp
  • warm water 110~ to 115~ - 2/3 c

How to make sopaipillas:

In medium mixing bowl stir together flour, baking powder and salt. Cut in shortening until thoroughly combined. Gradually add water, stirring with a fork. Dump flour dough mixture onto lightly floured surface. Knead dough until smooth (3 to 5 minutes). Place dough ball in plastic bag to keep moist while making individual sopaipillas.

Pinch off a ball of dough about 1 1/2 inches in diameter. Roll on unfloured surface until you have a large, flat circle, about 6 to 8 inches in diameter. With finger, dig a small hole in center of sopaipilla (to keep it from rising too high when fried). Place individual sopaipillas in hot oil (425°) for 30 to 40 seconds on each side. Drain on paper towel and sprinkle with either powdered sugar or cinnamon sugar, or leave plain and serve with honey. (Roll out another sopaipilla while first one is frying.) Continue until all are fried, approximately 20.
