Ingredients/Components

  • salt - 1/2 tsp
  • flour - 2 c
  • cold water - 1/2 c
  • baking powder - 2 tsp
  • shortening - 1/4 c
  • honey - 1 item
  • oil for frying - 1 item

How to make sopaipillas:

Combine flour, baking powder and salt in a bowl. Cut in shortening with pastry blender. Add water gradually to make a stiff dough, adding more water if necessary. Knead dough on lightly floured board. Cover with cloth and let rest 15 minutes. Roll dough out on floured board until very thin. Cut into 2 or 3-inch circles or squares. Drop into hot oil and fry until browned, turning often. Dough will puff as it fries. Serve with warm butter and honey.

Alternative: Use frozen Bridgeford yeast dough. Thaw. Pull off pieces and stretch out into thin slices. Drop in hot oil and fry until brown, turning often.
