Shrimp with feta cheese
Ingredients/Components
- salt - 1 tsp
- butter
- oil
- freshly ground pepper - 1/4 tsp
- chopped fresh parsley - 1/4 c
- oregano - 3/4 tsp
- minced onion - 1/2 c
- Feta cheese - 4 oz
- small clove garlic, minced - 1 item
- white wine - 1/2 c
- large shrimp, shelled and deveined - 1 lb
- ripe medium tomatoes, seeded and chopped - 4 item
How to make shrimp with feta cheese:
Saute onion in butter and oil until soft. Add wine, tomatoes, garlic, salt, pepper and oregano. Bring to boil; lower heat to medium and simmer until sauce is slightly thickened. Stir in cheese and simmer for 10 to 15 minutes. Just before serving, add shrimp to hot sauce and cook 5 minutes or until shrimp are just tender. Do not overcook. Garnish with parsley and serve immediately. (This is also good substituting Blue cheese for Feta.)Recipe categories: Main dish, Shellfish, Shrimp.
