Ingredients/Components

  • butter or margarine - 1/2 c
  • all-purpose flour
  • chopped onion - 3/4 c
  • chopped celery - 3/4 c
  • chopped green pepper - 3/4 c
  • salt and pepper to taste - 1 item
  • hot cooked rice - 1 item
  • chopped parsley - 1/4 c
  • cayenne to taste - 1 item
  • chopped green onion tops - 1/4 c
  • peeled, uncooked shrimp - 1 lb

How to make shrimp etouffee:

Melt butter in a large skillet. Add flour and lightly brown it. Add celery, green pepper and onion. Cook until tender, stirring occasionally. Add shrimp. Cover and cook 15 minutes on low heat, stirring occasionally. Add salt, pepper and cayenne to taste. Add onion tops and parsley. Simmer a few minutes, covered, to blend seasoning. Serve over rice.
