Shrimp and rice salad
Ingredients/Components
- salt - 1/2 tsp
- oil - 1/4 c
- pepper - 1/4 tsp
- peas - 1 c
- tarragon - 1/4 tsp
- white vinegar - 1/3 c
- parsley, minced - 1/2 c
- sliced ripe olives - 1/2 c
- green onion, minced - 1/2 c
- white rice - 2 c
- medium green pepper, minced - 1/2 item
- baby shrimp - 1 lb
How to make shrimp and rice salad:
Cook rice and peas. While rice is hot, add oil, vinegar, salt, pepper and tarragon. Toss slightly; cool, then add peppers, parsley, green onions, peas, shrimp and olives. Mix and cover bowl. Refrigerate when ready to serve; top with watercress sprigs.Recipe categories: Salads, Shellfish, Shrimp.
